The kidney-like form of kidney beans is the inspiration for the name of this legume variety. In many cultures, they are a staple dish that is both delicious and healthy. Kidney beans are officially known as Phaseolus vulgaris in plant science. White, cream, and speckled types are also possible, in addition to the more typical red beans.
When cooked, kidney beans have a velvety texture and a robust taste. You can find them in many different recipes, including as chili, salads, stews, and soups. Protein, fiber, and many minerals and vitamins can all be found in kidney beans. Not only are they low in fat, but they also contain antioxidants.
Keep in mind that kidney beans contain the naturally occurring toxin lectin, which can be dangerous if consumed uncooked or cooked incorrectly. Thus, to eliminate any possible toxins, it is advised to prepare kidney beans according to the right method before eating them. For the most part, the lectin may be neutralized by boiling the beans for at least 10 minutes.
